2 tbs olive oil
1 onion
1 bag frozen corn
1 bag frozen kale
2 cups dried black beans, soaked
2 red peppers, diced
2 clvoes garlic, minced
7-8 cups broth
2 tsp cumin
1 tsp smoked paprika
1 tsp Cayenne pepper or chili powder
1 tsp mustard
Soak beans overnight. Add beans to broth. Bring to boil and simmer 1 1/2 hours. Add veggies. Simmer 30 minutes or until tender. Top with avocado.
