Caramelized Onion Jam
Ingredients
- 4 large onions, thinly sliced
- ½ cup water or no-salt vegetable broth
- 2 tablespoons apple juice
- 1½ tablespoons apple cider vinegar
- 1 teaspoon dried thyme
- ¼ teaspoon black pepper
Instructions
- Place the onions, water (or broth), and apple juice in a large skillet or saucepan.
- Cook over medium-low heat for 45–60 minutes, stirring every few minutes.
- As the liquid evaporates, add water or broth 1–2 tablespoons at a time to prevent sticking.
- Continue cooking until the onions are very soft, deep golden, and jam-like.
- Stir in the vinegar, thyme, and black pepper.
- Cook for another 5 minutes.
- Leave chunky or pulse a few times for a smoother spread.
French Onion Version
Add:
- 8 ounces mushrooms, finely chopped
- 1 teaspoon thyme
- ½ teaspoon rosemary
Cook the mushrooms with the onions from the beginning.
Roasted Garlic Onion Jam
Add:
- 1 whole head roasted garlic, mashed
Stir in during the last 10 minutes of cooking.
Sweet Onion Chutney
Add at the beginning of cooking:
- ¼ cup raisins, finely chopped
- ¼ teaspoon cinnamon
- 1/8 tsp ginger powdered
- 1½ tablespoons apple cider vinegar
The raisins slowly soften and almost melt into the onions, creating a true chutney texture rather than tasting like separate pieces of fruit.
