Curried Apple Stuffed Green Peppers

Serves 4

Ingredients

4 large green bell peppers

1½ cups cooked rice

1 cup cooked white beans, lightly mashed

1 medium onion, diced

1 medium apple, peeled and diced

2 medium carrots, finely diced

2 cloves garlic, minced

2 tablespoons apple juice

½ cup no-salt vegetable broth

1 1/2 teaspoons curry powder

½ teaspoon ground ginger

¼ teaspoon black pepper

1 tablespoon lemon juice

1 tsp dried parsley

Instructions

Preheat the oven to 375°F (190°C). Slice the tops off the peppers and remove the seeds and membranes. Set aside. In a large skillet, cook the onion, carrot, and garlic in the apple juice over medium heat for 4–5 minutes, adding a splash of broth if needed. Stir in the diced apple, curry powder, and ground ginger. Cook for another 2–3 minutes until the apple begins to soften. Add the vegetable broth, cooked rice, mashed white beans, black pepper, lemon juice, and parsley. Stir until heated through. If the filling seems dry, add another splash of broth. Spoon the filling into the peppers and place them upright in a baking dish. Pour about ¼ inch of water or vegetable broth into the bottom of the dish. Cover loosely with foil and bake for 35–40 minutes, until the peppers are tender. Remove the foil during the last 10 minutes of baking.
