 GARDEN VEGETABLE RICE SOUP

Serves 6

Ingredients

• 1 cup cooked rice
• 2 carrots, sliced
• 1 cup green beans, cut into bite-size pieces
• 2 cups cabbage, shredded
• 1 small onion, diced
• 2 cloves garlic, minced
• 6 cups no-salt vegetable broth
• 1 teaspoon dried thyme
• 2 tablespoons fresh parsley, chopped
• Black pepper to taste

Optional

• Add 1 cup cooked no-salt garbanzo beans
• Serve with lemon wedges for squeezing over individual bowls, if desired.

Instructions

  1. Add the carrots, green beans, cabbage, onion, garlic, and vegetable broth to a large pot.
  2. Bring to a boil. Reduce the heat and simmer for 25–30 minutes, until the vegetables are tender.
  3. Stir in the cooked rice and thyme.
  4. Simmer for 5 minutes.
  5. Remove from the heat and stir in the fresh parsley.
  6. Season with black pepper and serve hot with lemon wedges on the side, if desired.
