 Roasted Garlic Cream Sauce

Makes about 2½ cups

Ingredients

  • 1 can (15 oz) no-salt-added white beans, drained and rinsed
  • 1 whole head roasted garlic
  • ¾ cup no-salt vegetable broth
  • ¼ cup apple juice
  • 2 tablespoons lemon juice
  • ¼ teaspoon black pepper
  • ⅛ teaspoon ground nutmeg OR ½ teaspoon salt-free all-purpose seasoning

Directions

  1. Add the white beans, roasted garlic, broth, apple juice, lemon juice, black pepper, and either the nutmeg or salt-free all-purpose seasoning to a blender.
  2. Blend until completely smooth and creamy.
  3. Transfer to a saucepan and warm gently over low heat.
  4. If the sauce is too thick, add a little additional broth until it reaches the desired consistency.
  5. Serve warm over rice pasta, potatoes, rice, or vegetables.
