Here are some simple pasta recipes. If you are avoiding tomatoes, after the first post, you'll find a bunch of no-tomato options. Serve on your favorite organic rice pasta.
Traditional Tomato
2 cans organic tomatoes pureed or one chopped if you prefer it a little chunky (basil or fire roasted).
Bay leaf
Onion
Organic Italian seasoning to taste (about 2 tbs)
Honey (about 1 tbsp but adjust to your preference)
Saute the onion. Add the the remaining ingredients. Being to a boil and then simmer for about a half hour.
Beet Sauce
4 beets
Onion
Honey
Bay leaf
Organic italian seasoning to taste
Organic Rice milk (to desired consistency)
Roast the beets. Saute the onion. Add the beets and rice milk. Puree with a hand blender or other blender. Return to heat and add seasonings and simmer 1/2 hour.
Pumpkin Sauce
1 can pumpkin
Onion or garlic
1 1/2 cups organic rice milk (more or less depending on how thick or thin you want it)
A sprinkle of nutmeg or 1 tsp sage
Honey
Bay leaf
Dairy Free Yogurt or Juice of 1 lemon (Optional)
Coconut aminos (Optional)
Saute the onion. Add pumpkin and rice milk and spices. Simmer 1/2 hour.
Red Pepper Pesto
Note: Red peppers are a nightshade
Bag of frozen pearl onions
Jar of red pepper (plain not with vinegar)
Sautee the onions. Add the red pepper. Heat and then puree on a blender. Serve on pasta.
Pasta and Egg
Onion
1-2 eggs (depending on how eggy you like it)
1 cup rice pasta
Coconut aminos (to taste)
Cook the rice pasta according to directions. Sautee the onion. Add the egg and scramble. Add the pasta and sprinkle on coconut aminos. Optional: Along with the onion saute a veggie like broccoli.
